I miss Larry Parker's, I now live in Nonthaburi, Thailand.
I used to manage "At My Place", a nightclub in Santa Monica that featured performers who played original material.
When I was 18, I invented Kramer's Quesadillas. The defining ingredient is marinated artichoke hearts. One day, as Larry was walking by, I said to him that I had an item for his menu. Larry said to write the recipe on a napkin. When he walked by again, I handed him the napkin.
Larry read the recipe and then said, "Good, I have all of these ingredients." He then said to a busboy, "Give this to José in the kitchen."
A few minutes later, a waiter brought out a plate of Kramer's Quesadillas. Larry took a bite and said, "It's good! It goes on the next menu!"
As one would expect, Larry was a smart cookie. He knew folks whose recipes were in his menu would bring in their friends and order their dish. My recipe stayed on Larry's menu for a couple of years.
