Every Thanksgiving I make a vegan stuffing with cubed, stale bread...whatever you like. This year I used cranberry bagels, herb veggie bread and some left over foccacia. I usually cube the bread a couple of days in advance and let it sit in a pan on the counter getting stale. Then I saute garlic, onions, mushroom and celery in some oil and add that to the bread. I toss in walnuts, flax seeds, and sunflower seeds. I chop up figs and throw those in and sometimes I soak dried cherries in apple cider and add that. Then I mix it all together in a big roasting pan, add a few cups of veggis stock and a splash of cider and bake, covered in the oven at 400 degrees for about an hour. you can broil the top at the end and get is nice and brown and crispy.
